Breakfast anyone?

I recently got a co-worker who is vegan a cookbook which doubles as a journal to complement her vegan lifestyle. This has earned me many meals many of which I have enjoyed and a few which I deemed unpalatable.
She has also been preserving fruits and veggies like crazy and this is my favorite one – Habenero Apricot. Great on toast for breakfast and superlative when I decide to glaze duck or chicken for family’s dinner. The vegetarian in me loves this spicy marmalade mixture with fried tofu, snow peas, carrots and mushrooms but we were talking about breakfast weren’t we? Bon Appetit!!!
